Scrambled Tofu


 

Ingredients 

1 tablespoon olive oil 

1 medium red onion finely chopped 6 – 8 mushrooms finely sliced 

600gms firm tofu crumbled into a bowl 2 clove garlic micro planed 

2 tablespoons fresh turmeric micro planed 2 tomatoes finely chopped 

2 handfuls of kale or baby spinach 1 bunch flat leaf parsley finely chopped Salt and black pepper 

Method 

  • Heat olive oil in pan 
  • Add onions and cook until  translucent 
  • Add mushrooms and cook until brown
  • Add crumbled tofu, garlic and   turmeric and cook until tofu is slightly browned 
  • Add tomato and greens and continue cooking until moisture is absorbed 
  • Season and serve with gluten free toast  or sourdough.
