Fresh Herb & Walnut Patty
1 cup walnuts
1 cup red capsicum
1/2 cup semi-dried tomatoes
2 Tbs sunflower seeds
2 Tbs pine nuts
Handful flat-leaf parsley finely chopped
Handful basil finely chopped
Add any other fresh herbs you like (thyme and oregano are delicious too).
Organic herb salt and pepper
Fresh Herb & Walnut Patty method:
Chop herbs and set aside, add all other ingredients into blender and pulse until mixture holds together, stir in fresh herbs, taste, season and shape by hand, enjoy.
