1 avocado deseeded and halved ½ lemon juiced
¼ cup mixed sprouts
½ tsp olive oil
1 tomato finely sliced
½ lebanese cucumber finely sliced sea salt & fresh cracked black pepper
2 x slices toasted sourdough bread
Sprinkle salt, pepper, olive oil and ½ the lemon juice on each avocado half and smash inside
Spread evenly on toast, squeeze more lemon juice on top.
Serve with sprouts, tomato and cucumber on the side to add as desired and enjoy!
