Upside Down Apple Cake (Vegan)


Spiced apple 

8 small apples peeled & cut into small  pieces 

2 tablespoons vegan butter 

2 tablespoons coconut or brown sugar 2 teaspoons cinnamon 

I teaspoon nutmeg 

1/2 lemon juice 


2 cups spelt flour 

1 cup plain flour 

2 cups raw sugar 

2/3 cup coconut oil at room temperature 2 cups milk (soy or brown rice) mixed with 2  tablespoons of apple cider vinegar 3 teaspoons baking powder 

I teaspoon bi carb soda 

1/2 teaspoon cinnamon 

1/2 teaspoon vanilla 

1/2 lemon rind chopped finely - not white  pith as it;s bitter, and juice 


Spiced Apple 

Mix all ingredients together and place into a  floured and lined tin ( I used a 28cm square  tin) 


Mix all wet ingredients together. 

Mix all dry ingredients together 

Pour wet ingredients into dry ingredients  and 

Mix until combined. 

Pour over apples and bake for 25-30  minutes or until a skewer comes out of the  cake clean 

Enjoy warm with coconut ice cream, also  great cold!
